I understand that Marie Antoinette is known to have had a Habsburg Jaw...what exactly is this?

The Habsbourg lip is the shape of lip which one finds at almost all the Habsbourg family: a rather fine upper lip, and a more important lower lip. The portraits of Marie-Antoinette shows it well in general :D

Louis XVI I could comment on the portraits of Marie-Antoinette during hours! What a beautiful nose acquilin she had! What a beautiful face and what splendid eyes! What a nice small double chin with a small "faussette" (I don't know how to say it in english... :oops: )!
